Soba noodles with carrot and zucchini

Makes 4 servings
This can be a main dish or a side salad.

    3-4 tablespoons fresh lime juice                               
    6 tablespoons soy sauce                                        
    1 1/2 tablespoons fresh minced ginger                          
    1 1/2 teaspoons sugar                                          
    1/4 cup vegetable oil                                          
    1/2 pound soba noodles, cooked to tender, rinsed in cold water and drained
    5 carrots, cut into 1/8 inch matchsticks                       
    6-8 baby zucchini or yellow squash, cut into 1/8 inch matchsticks
    1 bunch scallion, thinly sliced                                

Whisk together lime juice, soy sauce, ginger, sugar, and oil in a large bowl.  Add remaining ingredients and toss to combine.  Season with salt and pepper.  Serve at room temperature.
