Vegetarian Collards from the Corner Kitchen


1 Bunch           Collard greens, Cleaned and rough chopped

1 each              Yellow Onion (minced)

1 Tbsp.            Garlic (minced)

2 Tbsp.            Olive oil

1/2 cup                        Molasses

1/2 cup                        Apple Juice

1/2 cup                        Apple Cider Vinegar

1 Tbsp.            Tabasco (or other hot sauce)  

to taste                        Salt and pepper


Method: Heat the oil, add the onions and the garlic. Slowly add the Collards and wilt under medium to high heat. Add the Molasses, apple juice and cider vinegar. Simmer for at least one hour. season to taste with Hot sauce and salt and pepper.
